I Can’t Eat…How Can I Enjoy Thanksgiving Dinner?

Thanksgiving Holiday is a wonderful time of year to celebrate with family and friends.  I love the all the preparation, pumpkins on the porch, setting the table with beautiful china, planning the meal, and mostly getting together with those we love. My daughters come over the night before and we cook, we talk, we laugh and we try new recipes. My husband has been gluten, sugar and lactose intolerant for as long as I can remember. So how do we make Thanksgiving Dinner wonderful for him? We substitute, substitute, substitute!

You will find in our Newsletter this month a recipe for Stuffing Rice. This recipe is actually used year round. My husband has always loved my stuffing but can’t eat the breaded stuffing we put into the turkey. I realized he can eat all the ingredients from the stuffing accept the bread. So I cooked rice and wild rice and added my stuffing ingredients to the rice and hurrah! He has all the flavors he enjoys without the bread.  He also loves mashed potatoes but the milk used to make them is a problem. So we use Chicken Broth instead of the milk and they turn out creamy and no one knows the difference.  Our table is loaded with vegetables and we also do candied yam for those who don’t know any better.

Oh, so you want to know about dessert? Yes we actually make a Pumpkin Pie kinda thing and yes, I once again substitute, substitute, substitute. I use oats and rice flour and butter and a touch of maple syrup for the crust. Coconut milk (my new BFF) is substituted for milk and all those yummy spices go right into the pumpkin mix. I sometimes substitute puree pears for sugar. I purchase them in the baby food section, it is just the right amount. Look for this recipe on our website this month.
